Big family meals!

    What do you typically do for lunch?

    There's seven of us. Dinner I've got down. Breakfast too, but lunches have me confused. LOL I'm used to two meals a day, but new family is used to having lunch.

    Got some good and healthy ideas that do NOT include lunch meat and do not cost a small fortune? And hopefully that I don't have to spend a lot of time on. Or effort. Or anything else. Or serve. And that don't get dishes dirty. Haaaaaaaaaaaaaaaaaa

    Ok, ya know what I'm asking...if you have lunch ideas, SHARE PLEASE!

    My kids are not big on sandwiches, so we usually do lunches such as
    Soup-big batches frozen into individual portions
    Leftovers are big here
    Pasta- again frozen into individual portions, sometimes with broccoli added
    Pasta sauce-big batches frozen into ice cube trays so they can use I or 2 depending on how much sauce they want
    Bean burritos
    Yogurt and fruit
    Hard boiled eggs
    These are our stand-bys. The girls and their friends can take what they want, and it is easy on everyone.

    We're 6 here and honestly, I hardly ever make lunch for everyone. In our home, breakfast and lunch are FFY (fend for yourself) unless you're too little and need help. But most of our lunches are leftovers, sandwiches (cold cuts if we have them otherwise egg salad, chicken salad, tuna salad, PBJ, etc.), or something like chicken nuggets, soup, grilled cheese or whatever. I never plan lunches - they just happen.

    Soup and grilled cheese or peanut butter and jelly makes a great lunch.
    egg salad, tuna or chicken salad sandwiches with baked chips, or sun chips (less fat healthier)
    anything on a tortilla.
    make your own burritos, low fat refried beans and a little cheese.
    quesadilla
    spaghetti
    chicken and dumplings used to be my kids favorite snow day lunch. recently I've taken to adding a little celery and carrots and small handful of peas.
    make dinner big enough to have leftovers the next day.

    Thanks for the suggestions! I've got the bean burrito thing down Donna, that is such a quick, easy, and cheap meal! LOVE IT! :thumbs:

    Maybe I'll just slowly introduce the concept that lunches should be non-existent or made yourself, and in the meantime I'll take up on the suggestions made here. :1_grouphug: Y'all are so helpful!

    Sounds...icky. LOL When it comes to hot dogs, Hebrew National is about the only brand I can eat without trying not to gag.

    Hebrew National is my very favorite, but can't afford them, Nathan's beef is a close second, everything else, naw.

    We usually make lunch mostly veggies.

    I make a cabbage concoction that works good. It is actually the stuffing for cabbage yeast rolls but we like it just like it is.

    1 lb hamburger
    4 cups chopped cabbage
    1 diced onion
    2 tbsp minced garlic
    salt & pepper to taste
    Worcestershire sauce (to taste... I use about 4 dashes)

    Put meat, cabbage, onion, and garlic in large pot, cook on medium-high heat. Stir often to break up hamburger. Cook until cabbage is done and almost all liquid is gone. Add salt and pepper and Worcestershire sauce. Stir well and simmer to blend flavors.

    The recipe can double well, but you would need a big pot for it.

    A variation is to top each serving with a handful of shredded cheese. You can also stir in leftovers, such as corn or peas. Mushrooms also work well in this.

    I read just not long ago-------that Chicago's O'Hara International serves more hotdogs per day per person than any other place on the planet!!!! How close are you to O'Hara, Gina????????:laugh::type::type:

    Not too many years ago, we called hot dogs, "Preacher's Roundsteak". That was all we could afford, unless it was donated food.

    In Canada, we now have Angus hot dogs! They are made from pure Angus beef, and they are quite good.

    I usually don't want to mess up the kitchen for lunch. Most of the time I'm here by myself, so I just have some cheese and crackers and a piece of fruit. That's quick and easy, and the clean-up is simple. I just throw away the paper towel and I'm done!

    Jim, my mom's father was a pastor. They couldn't afford much meat, so they ate a lot of bologna. They called it Tennessee Tubesteak. LOL

    Not too close, although we went by it a few weeks ago. I'm in Oklahoma, and we're having HOT DOGS tonight by special request of the youngest. What's sad is he may not be here for dinner. EKE! If so, I'll try to switch the dinner plan if there's something else out.

    Lunch today was a mix of Arby's and Long John Silver's. Not exactly cheap, but it certainly was easy! :laugh:

    Gwen, In one church, there was a lady who brought me two dozen eggs each week,,,,,,,,,,for one person!.......Only things is, they were already cracked open and in a jar. One had to spoon them out.

    Oh, my!! :laugh: I guess that works just as well!

    Reminds me of a missionary barrel we received once--the dear ladies of the church saved all their old stockings with runners in them, and their used tea bags and sent them in the barrel. Bless their hearts, they meant well!!

    Sigh... the sound of a busy family. In summer, no less. Sounds a lot like us. In fact looking at our crazy summer schedules, I think that all four of us have been home at the same time for all of three days over the past 4 weeks.
