Baking next to a chicken that's going to turn into chicken and dumplings tomorrow. Warm food for chilly evenings!

Hi FoG!! How are you doing? How's wifey and her headaches? I've been getting them more again and it's getting really frustrating. I made dinner last night (chili in the crockpot) but didn't eat since I was down with the migraine.

Tonight we're trying a new recipe called Zuppa Toscana and it's supposed to be a knock-off of Olive Garden's soup. I hope it's good!

Hi Ann, Sorry to hear about you having more Migraines. Brenda has been lucky for having few Migraines for a change lately. (Saying that quietly-don't want to jinx her).

I'm usually the healthy one, and I ended up coming down with Acute Bronchitis. Which is why the meals I've made have been relatively simple lately.

Let me know how you like that Sausage soup recipe you're trying.

That's great about Brenda's migraines!! Now YOU take care of yourself with the bronchitis! I used to get that frequently and it's NOT fun!

The soup turned out GREAT!! Some of the family are requesting I make it with sweet sausage rather than hot so I'll try that next time. :) Here's the recipe:

    Zuppa Toscano

1 lb. Italian sausages (use spicy to get that signature Olive Garden flavor)
    4-6 russet potatoes, chopped
    1 onion, chopped
    1/4 REAL bacon pieces (optional)
1 Tbsp. minced garlic (about 3-4 cloves)
    32 oz. chicken broth
1 cup kale or Swiss chard, chopped
    1 cup heavy cream
    2 Tbsp. flour

    1. Brown sausage links in saucepan.
    2. Cut links in half lengthwise, then cut in slices.
    3. Place sausages, chicken broth, garlic, potatoes and onion in slow cooker. Add just enough water to cover the vegetables and meat.
    4. Cook on high 3-4 hours (low 5-6) until potatoes are soft.

    30 minutes before serving:
    5. Mix flour into cream, removing lumps.
    6. Add cream and kale to the crockpot, stir.
    7. Cook on high 30 minutes or until broth thickens slightly
    8. Add salt, pepper, cayenne to taste.

Collard greens. Lots and lots, as they were on sale and when something is that good and abundant, why not make a meal of it?
Tomorrow is a roast - will throw it all in the crock pot around 5:30 am, which works for everyone since we'll all be getting home at different times. Whoever gets home last gets their dinner most well done, I guess!

    That's quite a production!

    I didn't bother tonight. LOL
I went all out the other night with steak, mashed potatoes, green bean casserole, and apple crumble pie.
I think there's a mandatory rest period after all that!

I am kind of hungry after reading your post though! Everyone just threw together there own stuff as they came in at different times, except those who ate elsewhere.

I have nights like that Gina - nights where you don't care if they eat dog food - just don't make you think and prepare stuff! LOL

Today is our busy day with ballet from 5-6:15 and then church at 7. We live close to both so I have JUST enough time to get home, feed everyone and leave so I'm making sweet and sour chicken that I can toss in the oven and have ready when I get home. Easy peasy. I'm also going to make one for the freezer and I'm going to try a new recipe for cheesecake in a jar made in the crockpot. I'll let you know how it goes!

So how did the cheesecake go?

I've been sick and don't want cooking work, so I stuck a ham in the oven. There were scalloped potatoes and green beans and a pie to go with it. Tomorrow it can be stir fried rice, third day it can be ham and bean soup or bean soup and grilled ham sandwiches. Whatever the case, I get more SLEEP and they get ham. Which is rare around here.

We're having venison roast with potatoes, carrots, onions, and celery. I'm in the mood for no-bake cookies, so we might have those for dessert.

A whole roasted cauliflower, stir-fried collard greens, oranges, and feta stuffed cherry hot peppers.

Hubby already ate dinner, so we eat our normal stuff when I'm not cooking for him. :) (he's really awesome about trying new things and has added a lot of stuff to what he likes, which is really cool though!)

It's Thanksgiving, so we went out for dim sum. Had to make reservations and a good thing we did - wanted to sit around and finish the pot of tea after, but people were waiting for seating. We ended up getting coffee for dessert on the way home.

It was wonderful to not cook and have no mess.

As a nod to typical American custom, there's a pumpkin pie cooling and cool whip thawing out.

This is our first time going totally rogue (though we've definitely done mixed foods) and it has been thoroughly enjoyable. Dunno why I never thought of this before.

If anyone gets hungry later, I may make some latkes, but we're making mass amounts starting tomorrow night for a group, so maybe, maybe not. Depends on the mood and who wants to pitch in. I'm so enjoying not having dirtied a single dish today that I don't want to ruin it! :saint:

Both the Caesar salad and rice pudding sound really great right now!

Tonight was seasoned chicken breasts done on the cast iron grill and broccoli gratin for everyone else.
I had a crazy mad craving for - toast. LOL So my dinner was three slices of toast. No clue what that was all about!

Hubby is working in the cold, so he'll come home to a pot of super hearty chicken and dumplings, along with an apple crisp.

The doggie also gets VERY happy when I make this combo because she gets tossed pieces of chicken as I pull it apart and she loves fresh apple slices!
