Healthy dinner recipes?

    Do any moms have any healthy dinner recipes that will please two young children and a picky husband?
    I would love to do a recipe swap. I have some recipes I think you ladies would love and I would absolutely love to try some new recipes.

    Have you ever made Taco Soup? I've never found anyone who didn't love it.
    This is the easiest soup you will ever make. I serve it with Tostitoes Scoops with shredded cheese and sour creme on the side. Any corn chip will do. Use a big pot, it makes quite a bit. It's great if company is coming or to take to someone's house, or share with neighbors. You can freeze half or in portions, for a quick meal on another day. It freezes really well.

    TACO SOUP

    1 lb. lean beef
    1 medium onion, diced
    1 package Hidden Valley Ranch Dressing Mix
    1 package taco seasoning mix
    1 (28 oz) can crushed tomatoes
    1 (15 oz.) can pinto beans
    1 (15 oz) can chili beans
    1 (15 oz) can whole kernel corn not drained
    1 (15 oz) can petite diced tomatoes
    1 (10 oz) can Mexican style tomatoes with green chilies (Rotel- original or hot, you decide)
    1 can beef broth

    Beef bouillon cubes or powder (Or whatever bouillon you use.) I use Better Than Bouillon
    Salt as desired...but taste before adding...you may not want it.
    *I add the beef bouillon to give it a little beefier taste...you can do it or not. (It also makes it saltier) I like it with the bouillon.

    How to make it:

    Brown meat & onions in a skillet, breaking up meat, then drain.
    Mix Ranch dressing mix & Taco seasonings into meat and onions.
    In a big pot, put meat and onions and add rest of ingredients to mixture. Do not drain any cans...open cans and dump, dump, dump. I usually start with the crushed tomatoes, then the beef broth, then the rest. Stir well to combine and simmer on low about 20 or 30 minutes. This is a thick soup. Add about a can of water mixed with beef bouillon. Add salt to your taste, you may want to check first, it shouldn't need much.

    When you put the soup in your bowl, put a dollop of sour cream in the side of your bowl so you can get a little bit on your spoon with every bite. Some people like to put shredded cheese on top as well. After you make this once, you may tweak it to suit your own family's taste. It makes a large pot of soup so you can share with the neighbors or you can freeze half, or in portions, for later. It freezes great.

    Last night we had oven chicken fajitas for dinner. It is SUPER easy to make and the flavors are fantastic. We served it with fresh diced tomatoes, diced avacados and some sour cream.
