EOC never had pouring or sprinkling. The EOC, being the Greek church, knew how baptism was originally done in the scriptures and so kept that and that alone.
What’s important to us is the formula, water and Faith. Immersion isn’t necessary.
Show me one instance in Scripture where infants were baptized as non-believers. It isn't there. Show me one example of baptism by sprinkling. It isn't there. I don't care what man has done, I care what God says in His Word.
Show me one instance where it is taught that infants were to be refused baptism. It isn’t there.
