    There is a broad spectrum of how believers' interpret. And not merely Scripture.

    There is an interesting book that traces the likelihood any particular interpretation or position to socioeconomic and cultural factors.

    On another note.
    Before the fall man had available immortality. Genesis 2:9, ". . . And out of the ground made the LORD God to grow every tree that is pleasant to the sight, and good for food; the tree of life . . . ." Genesis 2:15, ". . . And the LORD God took the man, and put him into the garden of Eden to dress it and to keep it. . . ."

    Speaking of interpretation, I'm not sure "immortality" is the right word. Either one is, or is not, immortal.

    Could Adam have lived forever?

    We can't really say as many passages indicate Creation itself was purposed for redemption.

    But I suppose theoretically Adam had immortality as a possibility (just as the Judas had being faithful to Christ rather than betraying Him - and the Jews of accepting rather than turning Christ over to be crucified - as a possibility).

    It is an interesting, although perhaps useless, philosophical question to explore.

    The tree of life being a source of immortality. Genesis 3:22-23, ". . . lest he put forth his hand, and take also of the tree of life, and eat, and live for ever: Therefore the LORD God sent him forth from the garden of Eden, to till the ground from whence he was taken. . . ." I.E. Genesis 2:7.

    Old Testament Saints. There is an ongoing disagreement to their standing during the Old Covenant prior to now.

    Salvation has always been by grace through faith. Habakkuk 2:4, ". . . Behold, his soul which is lifted up is not upright in him: but the just shall live by his faith. . . ."

    So it is today that all God's people are in Christ of the New Covenant. Revelation 30:15.

    Genesis 2:16-17. 'And the LORD God commanded the man, "You are free to eat from any tree in the garden; but you must not ear from the tree of the knowledge of good and evil, for when you eat of it you will surely die."'
    Is God really insinuating, "But if you don't eat of it you're still going to die"? I don't think so.

    No. Adam was not made immortal. If Adam did not eat of that tree, he might still be with us today, if not being killed, having not eaten from the tree of life of the garden to make him immortal.
