Knee.....outch. (praise)

    Had a partial knee replacement yesterday afternoon. Went well.

    I have a walker and cane, but have not needed them (and bedroom is upstairs). So I was pleasantly surprised not to have difficulty walking or going up stairs).

    Sore, stiff....but not too bad.

    Oh yeah. Cooked turkey overnight, it's perfect! Made pea salad last night, going to make greasy beans now, then gravy last, then off to our daughter's for the dinner.

    I planned on smoking a turkey. Got bored two hrs in at 190 and went to 300. I can't tell the difference.

    I've started smoking things for two to three hours and then taking to the oven.

    I had to a few months ago (smoker caught on fire....and caught part of the yard...and shed...on fire and I moved the ribs to the oven).

    I want a reqtec grill and smoker. They make em in Augusta, and I'm guessing should be on sale due to the season.

    I use a pellet grill smoker combo. Will do 180 to 500.

    Done this for years, in the oven. Season turkey (I've found salted (liberally) with OO and butter is good), give it a blast of 350F for one hour (at about 2300 to kill surface bacteria), reduce heat to 200F and go to bed and check again around 0800 using meat thermometer, minimum temp for doneness is 165F. Turkey has cooked BELOW BOILING TEMP - very juicy. :)

    In the same vein as Sous Vide.

    I take all of that back (except the Happy Thanksgiving part). Nerve block wore off. :(

    Lol, betcha wish you'd used the cane and walker now. Hope you didn't do any damage to the repair.

    My wife had a full knee replacement two years ago and is walking fine now... The third day she was in so much pain I thought she was going leave the bed... I have one caution Jon to those who have knee replacements, make sure you stick your knee replacement leg out when you go through the airport scanner:Redface... You know I'm just looking after you Jon... Brother Glen:Biggrin
