was there ever a time when God was caught surprised, or else learned something brand new to Him then?

No. God knows all. God sees the end from the beginning.

Whenever God ask a question (as with Adam in the garden) it is not to learn something He didn't already know, but rather to move that person to the place He wants them to be.

God is so very different from us (there are none like Him to compare) He must always condescend to us, using language we can understand.

He describes Himself as Father, Son, Holy Spirit.. things we can comprehend and all is true but not a complete revelation of who He is.

Peace to you

The short answer is no. God can’t be God if that were true.

Isaiah 41:21-23 (ESV)
Set forth your case, says the Lord; bring your proofs, says the King of Jacob. Let them bring them, and tell us what is to happen. Tell us the former things, what they are, that we may consider them,
that we may know their outcome; or declare to us the things to come. Tell us what is to come hereafter, that we may know that you are gods
;
do good, or do harm, that we may be dismayed and terrified.

Only in the minds of those who oppose the doctrines of grace. Their ideas must violate God's perfection and omniscience.
There are some here who would seem to impose upon God human limitations though, or else would say that he imposed those upon Himself?

Many churches no longer teach basic bible doctrine. Something like God's omniscience is not even mentioned or taught in many churches.
God's omniscience is absolute. It is the Son of God on behalf of God the Father who takes on temporal and finite roles. John 1:18.

was the Lord ever have the opportunity to learn something did not knew before?
Apparently, one day God realized that he hated his Son … before that he thought he loved him and that they were “one”. ;)
[sorry, I could not resist.]

Yes, as many churches neglect to even give a sermon on real salvation unless its the required Christmas one
