How do YOU cook calves' liver?

    My husband cooks ALL liver in the frying pan "Yuck !!" I put all liver in a roasting pan with some water and lots of onion seasoned with salt and pepper, and cook until tender. Then I thicken the juice with flour and beef cube , add some dumplings return to the oven until dumplings are browned ............ it`s a lovely tasty dish . Serve with fresh vegetables from the garden........... prefer new potatoes and Kidney beans.

    Saggy, you do eat normal food like roast, and chicken....right?

    I'll pass also on calves' liver.It smacks too much of a punishment.

    My hubby loves it pan-fried with onions. I don't cook it, tho--he gets it at Longhorn. lol

    I've never had calves liver, but have eaten beef, pork, and chicken liver. Love them fried, the beef anf pork with onions, the chicken with HOT SAUCE

    Blech! I have texture issues with liver of any type. Therefore my recipe for most liver goes something like this:

    Open package. Dump into dishes. Walk out the backdoor. Set down the dishes and run. The dogs love it and may fight each other for it.

    My recipe for chicken liver is different and includes the use of fish hooks. :D

    Dipped in flour and fried is the only way I've ever had it. (No Onions)

    Generally with my nose plugged and from a distance. My Wife loves it, she is the only one in the family who can stand it.

    DH and I both liver and onions, so we have it frequently. It's a very good source for iron too.

    DH likes it fried with onions, so I tenderize the liver with a hatchet (LOL) to break up the gristle, dip it in flour, brown on both sides, then add water to the skillet and cook on VERY low heat so it will stay tender. I saute the slices of onion in a separate small skillet and lay them on top of the liver just before serving.

    Gwyneth: I may try your recipe. Sounds yummy!

    When I make Calves Liver for my Wife, this is the dish she requests most. I serve this with mashed potatoes and sauteed spinach.

    Sauteed Calves Liver

    Ingredients
    6 slices - Calves liver
    1 Large onion
    6 Slices - Bacon
    Flour
    Salt
    Pepper
    3 Tbsp. Balsamic Vinegar

    Directions
    FRY bacon in frying pan until crisp - remove to paper towels

    ADD onions, saute until brown, remove

    LIGHTLY flour liver, salt and pepper to taste, saute 3 mins. per side,
    DON'T OVERCOOK!

    REMOVE and deglaze pan with Balsamic vinegar, add all ingredients back to pan to blend flavors.
