I would say poured... and emptied.
Spilled implies not all was lost, that He retained some. But when He showed Himself to the eleven, He was flesh and bones... without blood. All was emptied out between the court and the cross.
If one does a study on the Greek word for 'shed' in Matthew 26:28, one can only come to the conclusion that Christ's blood was poured out.

I would say neither, I would say "shed".

When I spill something, I have just wasted it...
Jesus' blood was not wasted.
I like the word poured better...
Spilt also sounds like an accident.
"I spilt a glass of milk"
Meant I didn't mean to.
Jesus meant to give up his blood.
He shed his blood, poured it out... but it wasn't an accident, nor was it wasted... so I intentionally stay away from "spilt"
But that is just me. I would not correct someone over it.

I don't believe that spilled or poured is scripture but I could be wrong. I do find myself defended in my sermons that none of Christ's blood was wasted, so this has been an issue with me over the years. I would not say anything to anyone who used "poured or spilt" but for me I use what the scripture says and that is "shed". A lot of sayings in sermons is picked up from songs and I have been called on it for using them over the years. You hear something so much from the time you were a small boy in songs and sermons that you take them to be actual scripture when they in fact are not. I still get things wrong after all these years but try to correct myself when my attention is called to it. Pelple love to tell the Preacher "that is not scripture" or "could you tell me where to find that"?

On a serious note, I believe that all three terms, 'poured' and 'shed', specifically, and 'spilled', by implication, are Biblical terms, and refer to the death of the Lord Jesus on Mt. Moriah, and as AmyG. said, this is what it refers to. I'm sure I, personally, can and do find other things far more consequential than the use or misuse of these three terms.
(One of these days someone is actually going to comment on the 'Mt. Moriah' bit, but I'm not holding my breath while waiting.)

Heard a sermon re Mt Moriah : As Abraham’s son carried the wood of the sacrifice up Mt Moriah so Gods son carried the wood of the sacrifice up Mt Moriah , and his blood was (shed,spilt,or poured out,) and went down the earthquake crack into the cave where Jeremiah had hid the ark of the covenant, and poured onto the mercy seat.
Is this along the lines you were referring to Ed ??

No, it had nothing to do with Jeremiah, for I'd not heard that, to my recollection, but it is irrelevant. There was no earthly "ark of the covenant", for the blood to be applied to when "Abraham offered up Isaac", and the earthly "ark of the covenant" was in the temple, when our Lord was crucified, and not below in some cave. In either case, gravity did not cause the "shed blood" of either the ram, or the Lord to cover the earthly 'mercy seat', but it is a nice try, and you are getting there with the comment of 'carrying the wood'.
