So it all "depends" on how one interpretes the scriptures, regardless of ones theological model?

More like it! And person shouldn't be afraid to challenge what they have always believed, even to the point of giving it up for a more biblical view.

Is there any scripture that says God will stop giving spirtiual gifts to us? I've heard that there's no reason to think that he would keep giving them today but what people think and what the Bible says normally aren't the same thing.

Spiritual gifts are one thing.....revelatory gifts are another.
6Having then gifts differing according to the grace that is given to us, whether prophecy, let us prophesy according to the proportion of faith;

7Or ministry, let us wait on our ministering: or he that teacheth, on teaching;

8Or he that exhorteth, on exhortation: he that giveth, let him do it with simplicity; he that ruleth, with diligence; he that sheweth mercy, with cheerfulness.

12Truly the signs of an apostle were wrought among you in all patience, in signs, and wonders, and mighty deeds.

1Therefore we ought to give the more earnest heed to the things which we have heard, lest at any time we should let them slip.

2For if the word spoken by angels was stedfast, and every transgression and disobedience received a just recompence of reward;

3How shall we escape, if we neglect so great salvation; which at the first began to be spoken by the Lord, and was confirmed unto us by them that heard him;
4God also bearing them witness, both with signs and wonders, and with divers miracles, and gifts of the Holy Ghost, according to his own will?

20And are built upon the foundation of the apostles and prophets, Jesus Christ himself being the chief corner stone

3Beloved, when I gave all diligence to write unto you of the common salvation, it was needful for me to write unto you, and exhort you that ye should earnestly contend for the faith which was once delivered unto the saints.

Chapter 1: Of the Holy Scriptures
1._____ The Holy Scripture is the only sufficient, certain, and infallible rule of all saving knowledge, faith, and obedience, although the light of nature, and the works of creation and providence do so far manifest the goodness, wisdom, and power of God, as to leave men inexcusable; yet are they not sufficient to give that knowledge of God and his will which is necessary unto salvation. Therefore it pleased the Lord at sundry times and in divers manners to reveal himself, and to declare that his will unto his church; and afterward for the better preserving and propagating of the truth, and for the more sure establishment and comfort of the church against the corruption of the flesh, and the malice of Satan, and of the world, to commit the same wholly unto writing; which maketh the Holy Scriptures to be most necessary, those former ways of God's revealing his will unto his people being now ceased.( 2 Timothy 3:15-17; Isaiah 8:20; Luke 16:29, 31; Ephesians 2:20; Romans 1:19-21; Romans 2:14,15; Psalms 19:1-3; Hebrews 1:1; Proverbs 22:19-21; Romans 15:4; 2 Peter 1:19,20 )

or it does not matter either theological view on issue of Gifts ceasing or continuing?

I am a dispy but hold to neither. As I have posted in the past Scripture does not declare them to have ended and yet we do not see them active as they were in scripture. I do not see belief in the sing gifts being related to either doctrine.
