So then when all of these agree , which is the overwhelming majority of the time, we have undisputed the Original Text. It is only when there is a serious Variant , that there is any doubt. Which rarely, but does occasionally happen.

One would think so.
The New Testament variant disagreements still persist. And reasons need to be discussed and understood. TR and CT Franken Texts are in evidence as having wrong readings.

Codex are the hand copied mss.
Codex Sinaiticus is one of the whole Bible with other writings too.
Would not the best Greek text actually be the Majority Text if one did not agree with the CT vrsion?

Could very well be the case.
Think though majority of us who argue over this issue do not know what is needed to make valid textual criticism decisions though, and still hold one can use any Greek text and have word of the Lord

That is not true.
If a textual variant which changes the meaning of God's word, then no.
You are assuming that we have the exact wording of the Originals though
