quote:
Originally posted by da Gina: ANYHOW, it's got some kind of bloody vinegary like smell to it. Here's the thing. Did you ever have to clean up blood? Before you clean blood you pour bleach on it to help kill the ickies in it in case the person had anything that could be transferred, just in case you get any on you. When the blood and bleach mix it makes an unforgettable smell. Well, there's something in that stuff that's eerily similar to that scent. My unprofessional opinion is that they must add vinegar and with all the other junk they toss it it must have somewhat of the same effect as the blood and bleach, but to a lesser extent. Yummy! Sandwich, anyone?

Gina, I don’t know what kind of headcheese you are talking about. Mine doesn’t have any vinegar in it, not even in close proximity, can’t even mention them on a same thread! And even though it has several delicacies in it, I will not list them because you so graciously asked me not to. ;)

quote:
Originally posted by Dr. Bob: Baranabas, my jewish grandmother from Bohemia had headcheese in the fridge and a gallon jar of pickled pigs feet. Never could make the jewish-connection with that.

Pickled pigs feet?! Yuk, that is gross. Did people actually eat that stuff?! :(

Well, the best cream-cheese stuffed mushrooms I've ever had were at a friend's place, and I asked for the recipe but she hasn't given it to me yet. She did tell me that it was quite simple and included chives. But here's another recipe I found online. Not quite the same, but still yummy.

Cream Cheese Stuffed Mushrooms:

2 packages (8 oz. each) cream cheese
1 package (1 oz) dried, ranch-style party
dip mix
1/4 cup mayonnaise
2 tbsp dehydrated minced onion
1 tbsp parsley, dried
1/4 cup Parmesan cheese
2 pounds muchrooms, cleaned, stems removed
1 cup herb stuffing mix, crushed
1 - 1 1/2 sticks butter, melted

Preheat over to 350 degrees.

Mix first six ingredients (cream cheese
through parmesan cheese) in mixer or food
processor.

Generously fill mushroom caps. (You will
have cheese mixture left over, see note).

Mushrooms can be made ahead to this point,
covered with wax paper and then a few damp
papertowels and chilled.

Before serving, dip the stuffed mushroom top
side into stuffing mix to create a breaded
top crust and place in a greased baking
dish. Pour melted butter over mushrooms and
bake uncovered for 10 to 12 minutes or until
heated through and slightly browned.

NOTE: Use the leftover cheese mixture to
stuff cherry tomatoes or fill the ends of
endive leaves, or serve on bread rounds.

Ah, the power of cheese, it grew a 4 page thread in only 24 hours.

I like Colby and Jack. And Swiss isn't too bad either. I like grilled cheese with swiss on rye.
Anyone else have a weird grilled cheese favorite?
As you can see I'm working on my posts number. :D

katie, headcheese has nothing to do with cheese or vinegar. And it is certainly not pickled. It is prepared and packaged as the summer salami. It is primarily made out of the head meat of a calf or a pig, including the tongue (which is muscle). We season the small slices of meat with red paprika for color, garlic, onions and salt for flavor, and cook it in its wrapper until soft. When it is cooled, you can slice it like the salami. You take off the wrapper of the tin sliced headcheese, spread it on a whole wheat bread, and add tomato, and yellow pepper over it. Don't let da Gina dissuade you and frighten you about its color or smell ;) 'cause it is delicious! [IMG]

I want to know what's with people putting American cheese on apple pie? Who started doing this and WHY? If you're one of them, come forward! Explain this!

Barnabas you acutally make head cheese sound good. Iv never tried it, but I just might now. It made me think of my grandmother serving toungue sandwiches. They sound gross but are very yummy!

da Gina...Iv never tried american cheese on apple pie, but in our family we have always had a slice or two of chedder along with the big ole piece of apple pie. Don't know where, how or why it started, but its GOOD.

Ok, maybe it's normally cheddar, lol. I didn't first hear of it at all until I worked at a Burger King (sigh, I can't believe I'm saying that out loud) and people would ask for a piece of cheese for their apple pie. :D
