You ask me if I can prove the existence of at least 2 pre-reformation era denominations that practiced infant baptism, but aren't the RCC or one of the Eastern-Orthodox churches?
Sure.

There is the Coptic Church of Egypt.

They circumcise and baptise their infants, have their own pope and they have been dissenters since the council of Chalcedon at least.

The Assyrian Church of the East a.k.a. the Nestorian Church. Dissenters since about 431.

There always have been dissenters, but that doesn't mean there always were dissenters who followed the baptist distinctives.
