I always like acoustic. One the comes to mind, I hope you don't mind, is from this young lady. I really loved the guitar play. The rain song is a beautiful acoustic. Plus, with a few words changed, it really makes a good praise song.
If you really want to go out on a limb you may want to check out Renee Dominique. A million dollar voice. She plays the ukulele guitar. Here's a sampler.
Another fav of mine is this one by Kina Grannis and Boyce avenue. I like this cover better than the original.
