I've made buku Peruvian/Mexican ceviche, love the stuff. I even grow an Andean baccatum chile specifically for the Peruvian style.

Can I get what I need from Walmart to make a decent kinilaw?
you don't need much...just make sure you have some good fish, preferably with no bones...you'd need coconut milk, lemon or green lime, some not very hot pepper...lem'see, grated rice, grated corn, salt, fish, green bell pepper, onion leaves, bay leaves....no, just kidding. just coco milk (or grated coconut meat, if you don't like preservatives) lime and you're basically good to go.
