would like to know what he eats
He has claimed to have never have eaten a piece of cake in his life. He is a testament to self control.I know this will be oversimplifying, but I know he rails against processed foods (white flower, bread, etc.) and sugar (particularly refined sugar).
He's big into juicing, lots of fruits and veggies, etc. Don't know about his view on meats & healthy fats (olive oil, etc.). No doubt, that's one factor in his health and longetivity.
Like I said...oversimplified, but that's the scoop on him.

LaLanne describes his mother as religious, disciplined. When the Catholic religion wasn't enough - didn't demand enough, wasn't intense enough - Jennie LaLanne became a Seventh-Day Adventist. . . . Jennie LaLanne took her son to a lecture by nutritionist Paul Braggs, who talked about the evils of white sugar, red meat, dairy products. He talked about the miracles of minerals, vitamins and exercise. Jack sat mesmerized. And by that night, at home, he was converted - a sensation he compares to being born again. . . . I said to myself, "God, I can save lives. I can help 'em. I've got to get the truth out to these people."
LaLanne says that as a child he was addicted to sugar and junk food. At age 15, he heard Paul Bragg give a talk on health and nutrition. Bragg's message was very simple but had a powerful influence on LaLanne, who subsequently decided to focus on his diet and exercise habits.[4] He studied Henry Gray's Anatomy of the Human Body and concentrated on bodybuilding and weightlifting. In 1934, LaLanne graduated from Berkeley High School.[5]
Interesting, and it appears that there was more than one instance that influenced him and made an impact on his lifestyle.

I have read several accounts of him over the years, and all that touch the subject say he (and his wife) never eats meat, though "occasionally" they eat fish. One such account said "occasionally" means like twice a year. I know he pushes fruits and vegetables (usually the whole thing, including peels and stems), and among bread/grains, whole grains only. No doubt, he is living proof of how diet and exercise add to years. (Un)fortunately, he is a complete fanatic in the subject, the calibur of which very few others will ever be. Consider all this in relation to friends or family we may 'preach' to about fornication, drugs & alcohol, pornography, smoking, decency, gossip, honesty, et al. Lalanne probably sees the vast majority of humanity [especially Americans!] and their habits in a corresponding light, simply refusing to straighten up and not "sin" [refuse to exercise and eat right]. It's an eccentricity, but you can't degrade it for him.
