Or those Gentiles who converted.

For us today there in absolutly no mandated day of the week. We are to gather regularly, and thats the only admonition we have. We dont "have to" gather on Sunday, or Saturday, or any other day of each week. Its not even mandated that we make sure to gather once every 7 days.

"Do not forsake the assembling of yourselves together, as is the manner of some."

Personally, I gather once a week or so. Sometimes 2-3 times in a weeks time. We should love gathering with our brothers and sisters regularly because we are blessed when we do, and there are opportunities to use our gifts to minister to Gods people.

Not because we are commanded to gather on this day of the week, or that day of the week.

Because there is no command of that sort.
