A earthquake in the Midwest which is quite rare. In recent days there have been many quakes around the world. According to David Jeremiah's book "Until Christ Returns" quakes have been on the rise. So how does the non Pre-tribuer explain all these signs away?

Just by looking at the increase of percentage of quakes since the 19th century.

Baptist pastor Benjamin Keach (prominent signer of the 1689 London Confession) was alarmed by the spike in earthquakes, citing the 1692 Jamaica quake in his sermon A Trumpet Blown in Zion:

MATTH. III. 12.
Whose Fan is in his hand, and he will throughly purge his floor, and gather the Wheat into his Garner, but the Chaff he will burn up with unquenchable fire.
What amazing Earthquakes have there been lately in divers places, have not we in England, in London, felt some of it, (as well as most Nations in Europe) tho' not like to that in Jamaica, and some other places? are not these fearful Tokens and Signs of Gods Wrath and Indignation? are they not Harbingers and Presages of what is coming upon the World, and of the end thereof?
no doubt but the day of Judgment and End of the World, or Coming of Christ is very near; for he hath foretold as Signs thereof, that there shall be great Earthquakes in divers places.

My apologies. I thought when you asked for "any evidence that earthquake activity is on the rise today" you were asking for any evidence that earthquake activity is on the rise today.

That is limited to one area (I'm thinking globally) and the USGS states that this increase of earthquake activity is caused by induction by man. It's not a "sign" of the end times, IMO.

Lots of fracking.

Earthquakes, in divers places - If we take the word σεισμοι from σειω to shake, in the first sense, then it means particularly those popular commotions and insurrections which have already been noted; and this I think to be the true meaning of the word: but if we confine it to earthquakes, there were several in those times to which our Lord refers; particularly one at Crete in the reign of Claudius, one at Smyrna, Miletus, Chios, Samos. See Grotius. One at Rome, mentioned by Tacitus; and one at Laodicea in the reign of Nero, in which the city was overthrown, as were likewise Hierapolis and Colosse. See Tacit. Annal. lib. xii. and lib. xiv. One at Campania, mentioned by Seneca; and one at Rome, in the reign of Galba, mentioned by Suetonius in the life of that emperor. Add to all these, a dreadful one in Judea, mentioned by Josephus (War, b. iv. c. 4). accompanied by a dreadful tempest, violent winds, vehement showers, and continual lightnings and thunders; which led many to believe that these things portended some uncommon calamity.

It's not fracking; it's wastewater disposal. The water is injected at different layers and has different effects.

Doesn't the injection fluid come from fracking?
No. There is a huge saltwater layer under much of the mid-west. When oil is pumped out of the well it is mixed with the saltwater. The oil is extracted and the saltwater is pumped into disposal wells which are no longer being used to bring oil up. They can't pump it back into the active well because that would further dilute the oil being pumped from the active well.

In the past several years pumping has increased to meet the growing demand and wells that were not profitable due to high concentrations of saltwater are now considered profitable again so pumping from such wells his increased and thus pumping saltwater back into old disposal wells has greatly increased.

It has nothing to do with the 2nd coming. It has to do with our insatiable need for more and more energy. :)
