Did he assume the form and apperance of a man, but discarded it after death, or is he forever One in His dual natures?

I believe He will be 100% man and 100% divine for all eternity.

He has after all chosen to spend eternity in a human body.

Clarification: I think you mean this, but He will spend eternity in a resurrection human body - a body that is both physical and has characteristics that allow it not have the limitations of matter as we experience it in "normal" ways.

For instance, He was able to appear and disappear (in and out of locked rooms and in various diverse places) as well as be touched and eat/drink.

Apparently we will also gain those characteristics after we are resurrected/transformed.

yes, physical body, but glorified, so that seems to bypass being affected by laws of physics/time/space as we know them now!

Yes. He was resurrected into the kind of body we will have. He is the firstfruits.

I don't think we can say for certain we will have the same attributes. Jesus is God, we are not.

I believe Jesus kept his human nature once he was concieved...the form of his body changed, but he kept his human nature...which is more than just the "spirit" son of God inhabiting a fleshly body.
