What's for Dinner?

    So you added it to the tomato soup? I LOVE LOVE LOVE LOVE LOVE roasted garlic and will use any excuse to have it. :)

    Tonight is going to be a bit of a "fend for yourself" night. We have ballet until 6:15 and then I have to be at church ready to work by 6:30. So I'll grab a couple of slices of pizza for my youngest (the ballerina) and I and go straight to church. The rest of the family will be eating leftovers of which we have plenty.

    Yep.

    And always have oatmeal for a backup. LOL I'm on a new kick with that...even if I eat something else, I want to end the day with oatmeal! But no garlic on that. Though I bet there's a way to do savory oatmeal. Gotta think about that one.

    Last night was going to be chicken enchiladas but I ended up taking my 20 year old to the ER instead. She's OK. :)

    Tonight will be ravioli, tomato sauce and salad. I have just a little time between work at church then having to come back for a service that I have to work. So easy-peasy is the key tonight!

    I'm not cooking tonight because we're at ballet from 4:45 to 6:15 and I have to be at church at 6:30 so my little one and I will grab a slice of pizza.

    But my 20 year old will make dinner for the rest of the gang. Chicken Pesto Pasta. It's quick, it's easy and it's yummy!

    My Wife is in the hospital being treated for a serious Migraine headache, so I threw together Spaghetti and Meatballs, Italian Bread, Caesar Salad, and Pineapple-Upside Down Cake for everybody else while I'm at the hospital.

    OH no!! Again???? I'll be praying for her, brother!!! I found a few things that have decreased my migraine frequency a lot. I can tell you about them later if you want (Bitsy actually introduced me to some of the supplements).

    Tonight was a barn night (I was at the barn until after 5) so I put Swedish meatballs in the crockpot and am now fixing the noodles and peas. I made orange Jello for dessert to try and use some I had from .... almost 2 years ago?? LOL

    Must be in the air FoG, I was having one the same day, though it didn't hit fully until Saturday, when I also ended up needing treatment!

    It's still in the background, so I'm making stuff that doesn't smell too strong. Tonight is grapes, plus rice cooked with...a meat I can't explain. It's a Chinese thing. I know what to buy when I go, but don't remember the names of stuff!

    I may switch that to tomorrow and do chicken with roasted potatoes and almond green beans instead. Depends on whether I think I can best handle the smell of the meat or the smell of the Parmesan used on the potatoes.

    The smell of spaghetti is always scary with a migraine, but the worst? Cooked green peppers. I remember being at work with one, they refused to let me leave as they were short handed and needed at least a body there to avoid state intervention over how short staffed it was that night, and the cafeteria (medical setting, I was taking care of people) was making stuffed peppers. I ended up on the floor, couldn't even stand, and finally ended up having someone come get me. The person in charge was so mad that she put in for me to be fired because "she didn't notify us when she was throwing up, leaving the residents unattended while she was unable to help them." YA THINK?!
    I forgot about that. The DON had a good head on her shoulders though and simply chided her for not stepping in and HELPING on the floor instead of staying in the office, especially if she was so very concerned for the residents. I miss that lady - she was excellent at her job and at making that a wonderful place for the residents and the employees.

    Though - stuffed green peppers DO sound wonderful. Hrm. LOL Nope, can't, but if I can get a good month or two of no auras or signs of a migraine, I might just go for it! Or stuffed cabbage. It's been FOREVER!

    Anyone got a good recipe? I haven't made stuffed cabbage in years. And I really mean years, as in my kids were still in diapers then.

    You have my sympathy Gina. I've never had a Migraine, but I've seen the agony my Wife goes through with them. Glad you're feeling better.

    Tonight is BBQ Chicken, Garlic Mashed Potatoes, Green Bean Casserole, and Cherry Pie and Ice Cream for dessert.

    Tonight will be leftovers because I cleaned out the fridge and we have a lot of them that need to be eaten including a whole pork tenderloin! I have lettuce so we can make a salad and put the pork on it or whatever everyone wants to do. This works out well since I only have about 25 minutes between the time I get home from ballet and when I have to be at church.

    Cereal - Grape Nut Flakes, to be exact. It's the first time I tried the flakes style. It's really good! Also had dark cherry yogurt a bit before that.
    I love the regular Grape Nuts but it's too hard on the teeth once you get older (not I didn't say I, I said you, lol, DENIAL) but even with the hard stuff, it is delicious if you pour milk in it and eat it hot.

    Made a "taco ring." I saw the recipe online and it came from a Pampered Chef site. I set up a "toppings platter" next to it. I think everyone liked it - a line formed and the next thing I knew, it was gone!

    Of course, I changed it without having ever made it before. :laugh: I roasted garlic and mashed it with some butter and olive oil and brushed the crescent rolls generously after laying them out. With the filling, I used less meat and added refried beans.

    The garlic butter/oil stuff helped balance the sweetness of the crescent rolls out. I'll definitely have to add this to the rotation of easy dinners to throw together.

    I think today is a good day for soup. I had a chicken carcass from Thursday that I had stored in the sub freezing garage and I brought it in last night, added veggies and seasonings and made stock overnight. It's cooling a bit now and I'll pick through the bones in a bit to get any meat. I'll fridge the stock to defat it later and then we'll have chicken soup for dinner! I'll make biscuits and I think I'll make a big salad to go with it too. it's a lousy weather day, 20 year old daughter is still recovering from being sick and I have a migraine again so soup sounds perfect.
