What's for Dinner?

    Tonight will be crockpot tarragon chicken, buttered noodles, green beans, salad and I may toss an apple pie in the oven to top it off. :)

    Tonight was a "bail" night. I have a very sore throat and just feel really off today so on the way home from ballet, I picked up the "full meal deal" at our local pizza place. Large cheese pie, baked ziti and a chicken parmesan hero for $20. I had half a slice of pizza and I think I'm heading to bed....

    We JUST figured out the food for the next week to get us through Christmas. Tonight will be my daughter's favorite Wine Braised Italian sausage and I think I'll make my son happy and make a wedge salad (WAY cheaper at home) to go with it. :)

    The rest of the week will be:

    Friday - Kids will have leftovers while hubby and I go out on a date
    Saturday - Rib eye steaks, baked potatoes, creamed spinach, broiled tomatoes
    Sunday - Chicken Cordon Bleu Casserole, roasted carrots
    Monday - appetizer dinner (Brook Lodge water chestnuts, buffalo wings, steamed wontons, onion dip and veggies, and for my non-dairy daughter she will add in General Tso's chicken)
    Tuesday - glazed ham, scalloped potatoes, peas, applesauce
    Wednesday - squash and lentil stew, homemade bread

    Had a chia drink, now am eating a delicious little bowl of cream-topped organic yogurt with organic raspberries and organic granola. I feel so fat! LOL But it is very very tasty.

    On our date night last night I had goose for the first time ever with a wonderful cherry sauce on it. I liked it!

    Today is my youngest daughter's 10th birthday and she has a request:

    bacon covered meatloaf (it's a recipe from the Pioneer Woman)
    mashed potatoes
    gravy
    green beans

    Then we'll have birthday cake for dessert. :)

    It's New Years Day, which always means corned beef with potatoes and cabbage for dinner, with leftover bubbly drinks from the previous night. (non-alcholic juice spritzers, the kind they sell in glass bottles from Knudson - so yummy!)

    Grilled Swai (a type of mild Asian catfish) burgers and whatever else happens to make it as sides!

    Please note: Swai is DISGUSTING! It may be healthy and cheap, but YUCK!

    Then when you make toasted oatmeal instead, the mixture of the swai and toasted oatmeal come together to make a nasty stench that takes away your appetite.

    Hrm. There's your dieting tip o' the day. LOL

    Tonight is Irish Beef Stew with mashed potatoes. It's supposed to have the potatoes IN the stew but hubby doesn't like stew with potatoes so he'll get it over mashed potatoes instead. :)

    I also have salad and will have an apple pie with vanilla ice cream for dessert.

    Garlic infused tomato soup with grilled white cheese and applewood smoked bacon sandwiches. It's cold and sprinkling outside, so seems perfect for the weather and the mood here today!

    I made Irish beef stew about a week ago. Hubby really enjoyed it!

    OK - How do you make what you had for dinner? I figure the grilled white cheese and applewood smoked bacon sandwiches are using white American cheese and applewood smoked bacon but how did you do the garlic infused tomato soup? It sounds really good!!

    I ended up putting the potatoes back in the stew because it was looking like a very thin beef soup with carrots without them. Hubby was OK because I put the potatoes in for the last 15 minutes and they weren't mushy but still had form to them. :) Dinner was yummy and I had my dad over too so he enjoyed it as well.

    Take off the extra skins on a whole bulb of garlic, slice the top off, lay it in foil, then pour olive oil all down into the open top. Pull the foil up and bake it in the oven until it's all soft, then you can just squish the garlic out of it with ease.

    You can then use the whole cloves that slide out for most anything, or take it and mash it up with a bit more olive oil, which is what I like to do to make infusions. You can let it sit and it will strongly flavor the oil, or you can just add the mashed up garlic to your stew/soup whatever and it is amazing!

    Having roasted garlic ready is a beautiful thing. Garlic bread, using it with a rub for roasted meats, having it minced and in oil to stir fry veggies, all kinds of stuff!
