I’m really not a fan of “predestination”. My aunt and uncle are mentally handicapped and therefore are not “saved” by some protestant interpretation of biblical salvation, because they can’t repeat a prayer and “know” what they are saying. Does this mean that they're hell bound?

You cant possible know that.
Remember the blind man in John 9? When the pharisees asked, 'who sinned, this man or his parents, that he was born blind?'
Jesus answered: Neither hath this man sinned, nor his parents: but that the works of God should be manifest in him.'

There are many mentally deficient or with other kinds of severe limitations in our world. God has His reasons for their being so and may well consider them as He does infants in His plan.

What was her name, the blind gifted hymn writer who felt blest to be His and desired no change but gave all glory to God!

God has no needs, of any kind. We are truly blest when He allows our involvement in sharing His word and it brings one of His own into the kingdom!
