And Mark 8:31 says He will rise after three days. Which is in line with Matthew 12:40 and Luke 24:21.

That was said on the first day of the week, i.e. Sunday, so the first day since the crucifixion would have been Friday, and the second day since the crucifixion would have been Saturday thus making Sunday the third day since the crucifixion.
If Christ was crucified on Wednesday.
Thursday would be one day since.
Friday would be the second day since.
Saturday would be the third day since.
Sunday would be the fourth day since.

Lol, REALLY? God said this, you don't believe it, you rail against it:

Romans Chapter 9

15

For he saith to Moses, I will have mercy on whom I have mercy, and I will have compassion on whom I have compassion.

16

So then it is not of him that willeth, nor of him that runneth, but of God that hath mercy.

17

For the scripture saith unto Pharaoh, For this very purpose did I raise thee up, that I might show in thee my power, and that my name might be published abroad in all the earth.

18

So then he hath mercy on whom he will, and whom he will be hardeneth.
Doesn't demonstrate the necessity of the Wednesday crucifixion.

Jews counted any parts of a day and counted days starting in the evening

Friday. Day 1

Saturday. Day 2

Sunday. Day 3
That is the traditional understanding of the three days.

The proposed problem of the women fixing and serving food on the seventh day Sabbath is not addressed.

John 12:2, . . . they made him a supper; and Martha served: . . . .

And John 12:12, . . . On the next day . . . .
So it being Palm Sunday.

Now the Jewish Preparation Day begins at our Thursday night.

Mark 15:42, when the even was come, because it was the preparation, that is, the day before the sabbath, . . . .

I think the High Day Sabbath (first day of the Feast of Unleavened Bread) works to the favor of a Wednesday crucifixion, but I don't know how to resolve the "third day vs after the third day" conflict.

Using our time, for clarity;
Where was the body of Jesus at 9 AM on the first day of the week?

Where was the body of Jesus at 9 PM of our Saturday, yet the first day of the week?

What about at 559 PM of our Saturday, yet the end of the Sabbath? How do we know?

Jesus answered, Are there not twelve hours in the day? If any man walk in the day, he stumbleth not, because he seeth the light of this world. John 11:9
But he answered and said unto them, An evil and adulterous generation seeketh after a sign; and there shall no sign be given to it, but the sign of the prophet Jonas:
For as Jonas was three days and three nights in the whale's belly; so shall the Son of man be three days and three nights in the heart of the earth. Matt 12:39,40

“Speak also to the children of Israel, saying: ‘Surely My Sabbaths you shall keep, for it is a sign between Me and you throughout your generations, that you may know that I am the LORD who sanctifies you.
‘Therefore the children of Israel shall keep the Sabbath, to observe the Sabbath throughout their generations as a perpetual covenant. Ex 31:13,16

Mark 8:31, . . . after . . . . It's Greek is more commonly translated elsewhere as "with." So it can be understood as "with the third day."
