Why would Ellen need to do animal sacrifices, which were merely shadows of the true sacrifice provided by the Father in His Son - Jesus Christ? Ellen accepted Jesus as her sacrifice.

Did she, and we, still need to bring God sacrifices? Yes:

Rom_12:1 I beseech you therefore, brethren, by the mercies of God, that ye present your bodies a living sacrifice, holy, acceptable unto God, which is your reasonable service.​

Psa_51:17 The sacrifices of God are a broken spirit: a broken and a contrite heart, O God, thou wilt not despise.

Jer_17:26 And they shall come from the cities of Judah, and from the places about Jerusalem, and from the land of Benjamin, and from the plain, and from the mountains, and from the south, bringing burnt offerings, and sacrifices, and meat offerings, and incense, and bringing sacrifices of praise, unto the house of the LORD.​

Do we have sacrifices to make?

1 Peter 2:5 - Ye also, as lively stones, are built up a spiritual house, an holy priesthood, to offer up spiritual sacrifices, acceptable to God by Jesus Christ.​

Yes, for we have an Altar [Isaiah 56:7 KJB], which is the LORD's:

Hebrews 3:10 - We have an altar, whereof they have no right to eat which serve the tabernacle. - Hebrews 13:10​

Notice:

Isaiah 56:1 - Thus saith the LORD, Keep ye judgment, and do justice: for my salvation is near to come, and my righteousness to be revealed.

Isaiah 56:2 - Blessed is the man that doeth this, and the son of man that layeth hold on it; that keepeth the sabbath from polluting it, and keepeth his hand from doing any evil.

Isaiah 56:3 - Neither let the son of the stranger, that hath joined himself to the LORD, speak, saying, The LORD hath utterly separated me from his people: neither let the eunuch say, Behold, I am a dry tree.

Isaiah 56:4 - For thus saith the LORD unto the eunuchs that keep my sabbaths, and choose the things that please me, and take hold of my covenant;

Isaiah 56:5 - Even unto them will I give in mine house and within my walls a place and a name better than of sons and of daughters: I will give them an everlasting name, that shall not be cut off.

Isaiah 56:6 - Also the sons of the stranger, that join themselves to the LORD, to serve him, and to love the name of the LORD, to be his servants, every one that keepeth the sabbath from polluting it, and taketh hold of my covenant;

Isaiah 56:7 - Even them will I bring to my holy mountain, and make them joyful in my house of prayer: their burnt offerings and their sacrifices shall be accepted upon mine altar; for mine house shall be called an house of prayer for all people.

Isaiah 56:8 - The Lord GOD which gathereth the outcasts of Israel saith, Yet will I gather others to him, beside those that are gathered unto him.​

These sacrifices are the True burnt offering, rather than the carnal/typical/blood of bulls and goats, etc [temporary, until “the time of reformation” [Hebrews 9:10]] of the earthly/worldly sanctuary. Notice again:

Psalms 51:17 - The sacrifices of God are a broken spirit: a broken and a contrite heart, O God, thou wilt not despise.

Mark 12:33 - And to love him with all the heart, and with all the understanding, and with all the soul, and with all the strength, and to love his neighbour as himself, is more than all whole burnt offerings and sacrifices.​

Psalms 50:5 - Gather my saints together unto me; those that have made a covenant with me by sacrifice.​

God did not desire this sacrifice:

Psalms 40:6 - Sacrifice and offering thou didst not desire; mine ears hast thou opened: burnt offering and sin offering hast thou not required.

Hosea 6:6 - For I desired mercy, and not sacrifice; and the knowledge of God more than burnt offerings.

Psalms 51:16 - For thou desirest not sacrifice; else would I give it: thou delightest not in burnt offering.​

God desires these True sacrifices:

Psalms 54:6 - I will freely sacrifice unto thee: I will praise thy name, O LORD; for it is good.

Psalms 107:22 - And let them sacrifice the sacrifices of thanksgiving, and declare his works with rejoicing.

Psalms 116:17 - I will offer to thee the sacrifice of thanksgiving, and will call upon the name of the LORD.

Psalms 141:2 - Let my prayer be set forth before thee as incense; and the lifting up of my hands as the evening sacrifice.

Mark 9:49 - For every one shall be salted with fire, and every sacrifice shall be salted with salt.

Ephesians 5:2 - And walk in love, as Christ also hath loved us, and hath given himself for us an offering and a sacrifice to God for a sweetsmelling savour.

Philippians 4:18 - But I have all, and abound: I am full, having received of Epaphroditus the things which were sent from you, an odour of a sweet smell, a sacrifice acceptable, wellpleasing to God.

Hebrews 13:15 - By him therefore let us offer the sacrifice of praise to God continually, that is, the fruit of our lips giving thanks to his name.
Why the continual sacrifice of praise? Because Jesus inhabits the praises of Israel.

Psa_22:3 But thou art holy, O thou that inhabitest the praises of Israel.​

It's ok, the thread is nearing its end anyways, and enough information was provided on the OP topic for any who desire to study.

I understand that the Seventh Day Adventist Church historically believed that the end times would include a mass persecution of Sabbath keepers by Sunday worshippers.
Yes (but really by State (Governmental) Law (first local, then global), so not just 'Sunday worshippers', but all the world that does not keep God's commandments), and still is taught by the faithful (though not so by the ignorant an unfaithful these days), and you may read that in the still printed book, the Great Controversy, beginning with Chapter 35 - Liberty of Conscience Threatened. - The Great Controversy, Page 563 -- Ellen G. White Writings

Many things are now taking place which will bring this to the front (covid19, vaccination and climate change, and civil war brewing, all which are tied together).

In fact, see the Chaos Cycle here, as Civil War will happen (1%ers vs 99%ers), as 'they' want it to happen, and need it to happen.

Hmm, I guess it depends on what defines as 'mainstream'. Yet, I will say that there are many pushing to have this removed entirely, or to subvert it, or to hide it, or to distance themselves from it. Some are ignorant on it. Yet, the "present truth" movements (Moses Mason, Jeremiah Davis, Dwayne Lemon, Kili Silafau, David Gates, Eric Wilson, Elvin Bridges, Randy Skeete, Walter Veith, Stephen Bohr, Doug Batchelor, Health Institutes like Uchee Pines, etc., etc) the historical element, hold fast to the faith once delivered to the saints.
