Whats for Dinner?

Last night was smothered steak, buttered corn, and green beans. Hubby cooked it, and the dinner before that...scalloped taters and ham!

It's my turn tonight, and we're having sketti-n-meatballs with garlic bread.

Sunday...French Onion Soup and breadsticks. I've never made that soup before, so it may turn out interesting.

Well, tonight I HAD planned chicken fried rice. However, DD1 is working, DD2 is at a friends, hubby is playing music at the singles cafe (and I was NOT going with him *shudder*) so it's just me and the two littles. I ran out and got 6 lbs. of chopped meat and I made 8 burgers for later in the week and then cooked up the rest with some onion. I'll divy that up into 3/4 and 1/2 lb. packages for casseroles, spaghetti sauce, chili, etc. and I'll use 1/2 lb. tonight to make "slops". It's elbow macaroni, cooked chopped meat, onions and condensed tomato soup. It's kid comfort food around here. :)

I made Alice Springs Chicken with a tossed garden salad.

If you have ever been to Outback Steakhouse then you know what Alice Springs Chicken is... mine was WeightWatchers friendly, being grilled in the electric skillet (no oil) with Lawry's Season Salt, very low-fat bacon (Gwenalty green label), and fat-free cheese. We didn't have any mushrooms to go in it, though.

From Outback's menus description:
"Chicken breast flame-grilled and topped with sautéed mushrooms, crisp strips of bacon, melted Monterey Jack and Cheddar and finished with our honey mustard sauce."

I season my boneless skinless breasts with Lawry's on both sides and either grill them or use my Towncraft electric skillet to cook them without oil. I then cover them with mushrooms (if I have them), strips of bacon (low-fat now), and then sprinkle on plenty of cheese. I either zap it in the microwave to melt the cheese or use the oven at a low temp. The honey mustard is optional (pretty fattening), but the taste of the chicken is great on it's own.

It is really awesome served with a baked sweet potato, or steamed broccoli.

I would think the fattening would be the cheese, not the honey mustard. but sounds delicious, I'd be afraid to eat it though.

I've got sweet and sour chicken in the crock pot (with lots of extra veggies) and will be making some chicken rice to go with it.

Dinner will be leftovers from Friday's dinner with friends. Cherry chicken, green beans with onions, spinach salad, and French bread.

Subway grilled chicken breast sub on whole wheat w/pepper jack cheese, everything but jalepenos, vinegar, and a little sweet onion sauce. It's always nice when you get treated to lunch. ;)

Leftover sweet and sour chicken with some more chicken rice (rice made using chicken broth instead of water).

Gkids decided to pitch a fit about their dinner last night, so I made them "their own dish" for dinner: I gave them some burned string, and some wet laundry [torn from an old tee shirt]. After that they decided what I'd made them for their "real dinner" wasn't too bad. :laugh:

Tonight is Biscuit Pizza Bake, Italian Pasta Casserole, with Spicy Garlic Green Beans, Sour Cream Pan Biscuits, and Toffee Crunch Coffee Sundaes for dessert.
