Just make sure the leaves are clean and dry and the oil is hot. If you use olive oil be careful as the smoking point is low. They fry up crisp in just a few seconds.
Use tzaziki (sp?) if you don't want them plain...just tap a bit on off a spoon. Easily made with plain unsweetened yogurt, add seasoning like pepper and garlic to the yogurt for flavor. There should be easy recipes online for it.

So if I understand you correctly, Frying the leaves plain as-is will not cause them to wilt when they cook but will cause them to become become crisp? Interesting. I might need to try this. Thanks.

Exactly! Keep them exactly as they are, plain and dry. The only reason they would wilt would be if the oil isn't hot enough. It needs to be very hot, at least as hot as if you were getting ready to deep fry french fries. Easy test is to just stick one leaf in and see what it does. It should crisp up super fast.

Leftovers from last night, plus the pizza rolls my daughter has been hassling me about having.
Oooh, that reminds me. I gotta make REAL pizza rolls, not those weird frozen pre-made ones at the store. The kind where you make the dough and roll the sauce and pepperoni and cheese inside. Oooohhhhhh, that's one of the rare times I like anything to do with anything that has to do with pizza!

Grilled a beef tenderloin with onions and hot peppers, while Wifey made parmesan-coated french fries.
