Crabcakes with Red-Chili Mayo, Baked Potato Skins, Ham Caesar Salad, and Lemon-Mint Pound Cake with Strawberries for dessert.

Fettuccine Alfredo topped with garlic and Parmesan encrusted chicken chicken breasts, along with steamed broccoli. Fresh plums for dessert.

Carl and I only have one kid with us this week, so we decided it would be okay to have one special meal since we can afford it much better for three than we can with seven.


STEAK! Ribeyes tonight with loaded potatoes and some type of veggie to be decided later.

I've been trying my hand at this "encrusting" deal. Tried it with chicken, now I'm trying a slightly different deal with the steak by mincing some fresh rosemary (one of the only things I can make grow out here!) with the mashed garlic as part of what's going to be the crust. It will still be topped with parmesan for the finishing touch and if I didn't forget to buy them, portabella mushrooms surrounding it. Too bad hubby doesn't like seafood. I'd love to top it with lobster and shrimp. LOL Actually it's good he doesn't...the price of seafood in Oklahoma, once you actually FIND anything decent, is nightmare-inducing.

Frozen pizza, salad to go with it made with spinach, strawberries, mandarin oranges, and walnuts.

About to go eat the salad...yum! I usually pass on pizza unless it's strange and amazing.

My daughter will be making us tacos!
She's got a few weeks of doing the cooking on her own (being immersed this summer in life skills) so it gives me a nice break.

Everything tastes so much better when OTHER people make it. LOL

Tonight is courtesy of Costco mostly - cilantro lime flank steak, loaded potato salad and if I can get my finger to stop bleeding, I'll finish making black bean and corn salad. I cut my finger on one of the cans!!

Anything with lime and cilantro is a treat. Hope everyone enjoyed it!

My daughter made pizza tonight...NOT frozen! Even made the crust from scratch. A garlicky sauce, an interesting and tasty mix of Italian cheeses, and lightly sauteed green and yellow squash for the topping, along with fresh tomatoes. Delish!

Thanks. I did finally get it to stop - 2 bandaids and a large gauze later. MAN that thing bled like a stuck pig!!

Anything with lime and cilantro is a treat. Hope everyone enjoyed it!

It was amazing!!!!! Such yummy flavors and a great combo of food. I have been craving steak for days and was so happy to finally get some!

Grilled a beef tenderloin with onion and a few types of hot peppers. Wifey was in charge of the parmesan fries.
