You'll have to share the recipe for the dressing!!

Here you go: This is adjusted for raspberries (cranberries in the South are harder to come by; this adjusts for the taste differential):

Ingredients (feeds 8 people):

  • 1/4-1/3 cup chopped walnuts
  • 1/4 cup raspberries (or 1/4 cup cranberries)
  • 1/8 cup + 1 Tbs. balsamic vinegar
  • 1/2 cup red onion, chopped
  • 2/3 tablespoon white sugar
  • 2/3 tablespoon Dijon-style prepared mustard
  • 1/2 cup + 1 Tbs. olive oil
  • salt and pepper to taste
  • 5-6 cups mixed salad greens, rinsed and dried (about 1 bag)
  • 1 large Red Delicious apple, cored and thinly sliced
Directions

1. Preheat the oven to 350 degrees F (175 degrees C). Spread the walnuts out on a baking sheet in a single layer. Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted.
2. In a food processor, combine the cranberries, vinegar, onion, sugar, and mustard. Puree until smooth; gradually add oil (in ¼ cup increments), and season with salt and pepper.
3. In a salad bowl, toss together the greens, apples, and enough of the cranberry mixture to coat. Sprinkle with walnuts, and serve

Hot Dogs, Brats & Italian Sausage on the grill, Potato Salad, Macaroni Salad, Pasta Salad, and Coleslaw, Chips and Veggies.

I love brats! My blood pressure doesn't, but the rest of me sure does. ;)

Tonight was home-made sloppy joes, tater tots, coleslaw, apple pie, and ice cream.

Easy peasy. Pizza with the crust made of halves of English muffins. Didn't even bother to do half of them with garlic butter instead of tomato sauce, they all got sauced. LOL

Sticking with the American theme this week...tonight was cheeseburgers from heaven with enough toppings for those who don't want meat to still have a marvelous burger. Onions, bacon, tomatoes, lettuce, pickles, sauteed bella mushrooms, guacamole, ranch dressing...and the raw burgers were seasoned and then wrapped in foil and baked...the best way to retain juiciness and get all that seasoning all through the meat. Watermelon to go with it all.

We had sesame grilled chicken, pasta salad (with everything I could find put into it - marinated mushrooms, roasted red pepper, scallions, fresh mozzarella, cherry tomatoes, broccoli, zucchini, sundried tomatoes, artichoke hearts, etc.) and caesar salad. YUM!
