    I sauteed potato chunks with a bit of olive oil, salt, pepper, and garlic. Then I added diced pieces of a previously slow-simmered beef roast and a couple cups of beef gravy. It's simmering now and the beef is fork-tender. I also made a version of asparagus I learned from the cake boss, which turned out to be a very addictive and simple way to make it!     Everybody either has colds or the flu. I'm fighting a mean cold and living on Onion Soup and Toast. There is Chicken Shepherd's Pie and Noodle Pudding in the fridge for anybody who wants it to warm up.

    I cooked my own version of red clam chawder. I browned some onion in corn oil, and added two large chopped potatoes and three long carrots. Then I poured clam juice over it, and simmered until the potatoes and carrots were soft. Then I added about a pound of canned crashed tomatoes, and then more clam juice with a large can of clams. Brought it almost to the boil. Then I melted a half-stick of butter, added there three tbsp of flour, and added to the soup. Finally, I kept it very hot, but didn't let it to boil for 15 minutes. Tomorrow Hubby is going to make the judgement :thumbs:

    A Lean Pocket and fruit....:tongue3: since I am at work all night and had church earlier, so I didn't cook. My hubby had leftovers at home.
