Whats for Dinner?

Tonight was pretty easy for me. Last night we had "sticky chicken" which is a roaster coated with a rub then cooked for 5 hours at 250 degrees. It was yummy and when we were done, I took the carcass and put it in the crockpot with carrots, celery, onions, garlic and a bunch of seasonings then covered it all with water and put it on low. It cooked for 14 hours overnight and this morning I strained the broth off (it was seriously a dark gold color - YUM!) and then picked through the bones to get enough meat to make soup. Tonight I added freshly sliced celery, carrots and onions then some egg noodles and we had fresh homemade chicken soup. I also made nachos and that was dinner. :)

My Wife is coming home from the hospital today so I'm making her favorite meal: Coffee-Crusted Prime Rib, Tossed Salad with Carrot Dressing, Twice-Baked Deviled Potatoes, and Buttermilk Cake with Caramel Icing for dessert.

I planned on turkey burgers, even went shopping.
When I got home I remembered that three of the kids will be having dinner with their church group.
Then I remembered the other two have dinner at their grandmother's on Friday and my husband takes them.

I'll be having a cup of miso soup. The kind you just add hot water to.

I think this will be the first time since I've been married that I will be the only one home for dinner. It's a VERY weird feeling.

Loaded baked potatoes and a very loaded salad for the majority, add bbq beef brisket for the two short ones who are carnivores to the core.

Just pulled an apple crisp out of the oven for dessert. It smells divine in here!

The grandkids have been hinting all day that they want McDonald's tonight, so I guess I'll get a break tonight from cooking. A break once in a while never hurt anybody, I guess.

Ordered pizza from Pizza Hut tonight. Today I went "big grocery shopping" and I won't cook on big shopping days because I...well, don't want to.

A beautiful salad followed by curried red and yellow bell peppers, mushrooms and chicken over brown rice. We made peanut butter cookies for dessert. Delish!

Tonight is Chicken Fricassee with Dumplings, Sour Cream Mashed Potatoes, Caribbean Chicken Caesar Salad, Nutty Wild Rice, and
Chocolate-Banana Cream Cake for dessert.

Well...I guess I marched squarely into that one.:laugh::rolleyes:

I really need to remember not to reheat salmon in the microwave. I keep forgetting and every time the house stinks for two days (and I get stuck cleaning out the nuker).

His and hers pizzas- Canadian bacon & mushroom for Wifey. Turkey pepperoni, green and chili peppers, and tomato for moi. Doggie had some crust.
