Two of mine are:

1689 London Baptist Confession of Faith
This book is absolutely essential if one is a Reformed Baptist!

Believer's Baptism: Sign of the New Covenant in Christ
Editors Thomas R. Schreiner and Shawn Wright
This book is amazing! The contributors deftly deal with all arguments in favor of paedobaptism.

One of mine, which I haven't had occasion to really dig into, is this:

Duncan Dunbar, the record of an earnest ministry : a sketch of the life of the late pastor of the McDougal St. Baptist Church, New York : Chaplin, Jeremiah, 1813-1886 : Free Download, Borrow, and Streaming : Internet Archive

It's the life of Duncan Dunbar, a Baptist pastor who was originally from Scotland and which one of the members here recently made a thread in which this book was featured.
I found it to be very refreshing in a day and age when such things, as far as I can tell, do not happen anymore or are not written about anymore.

By His Grace and For His Glory

History of Baptists is good as well
Also his mammoth biography of Spurgeon, Living by Revealed Truth.

If you like history, Ardent Love for Jesus by Michael Haykin covers the 18th Century Baptist revival and introduces us to great men like Benjamin Francis, John Sutcliffe, Andrew Fuller, Samuel Pearce, William Carey, not forgetting the hymn-writer Anne Steele.

What is your take on the 1644 Baptist Confession?

Read lecture 8 yet?
As I recall, a lesson for modern translators who fail to see verbal plenary inspiration and adopt either a denominational view or thought-instead-of-word view. Seems he was ahead of his time.
