I had a meatball sub from Subway. :D I was in Chattanooga most of the day for ESL training, so I got to treat myself.

Last night was rice and beans with Cajun sausage.

Tonight is whatever they come up with, because I don't feel good and don't want to cook. I gave some general ideas.

I made chicken buritos. Used high fiber flatbread, grilled chicken, erfried beans made w/o fat, fat-free sour cream, and fat-free cheese. Sounds nasty, but they were rather good. Very good for the diet, too, I might add. ;)

I made a version of Spanish rice, along with corn and brean beans. The recipe was a new one and I replaced the diced tomatoes with salsa, but everyone loved it.

Pork. Forbidden in the Mosaic Law. Yet as a Christian I happily eat it, just as I do not keep a Sabbath. But meet with other Christians on the Lord's Day. Hard to beat a bacon sandwich actually.

mushroom salisbury steak, rustic mashed potaotes, corn and lima beans

I love a big thick bacon sandwich, can't beat it, but I no longer eat pork bacon, too much fat, but I wish I did sometimes.

Gwaltney puts out a 40% less fat bacon. We love it and it works better within our diet.

As for dinner, it was stir-fried chicken, seasoned turnip greans, green beans, and mashed potatoes.

It's hard to miss it... green label, "40% Less Fat" right above the window.

I know their brand, heres a hint, all bologna and hot dags are about as nasty as it gets. But I will look for their bacon. I never shop that part of the store because I don't eat it anymore. but want to check out the numbers on the bacon. Thanks!!!
I'll let you know about that sandwich.
