I included the Onion Chicken in the pm's I sent you and Trotter.

These recipes I got from a Taste-of-Home Cooking Magazine. Nothing fancy, just easy to make and eat.

I've stepped up to a new phase in introducing everyone to what used to be our normal diet. (extremely low on meat, high on veggies and fruits, not a lot of processed stuff) I'm still trying to include some favorites so as not to overwhelm the two youngest, so tonight was

Main course: a mix of black beans, soy beans, and carrots.
Side dish: Macaroni and cheese
In addition: either a banana or peanuts

It's hot, so a nice, cool dinner is in order!

Chilled rice topped with sun-dried tomatoes and diced avocados. We'll sprinkle it with black pepper, and serve with lemon wedges to be squeezed on top. Sweet apples for a side, and we're good to go! Yuuuuummmm.....
