Sugar snap peas and choice of ribs or chopped brisket. I'd throw in another side but I'm too lazy today.

Coffee-Crusted Prime Rib, Roasted Red Potatoes, Wild Rice Chowder, and Buttermilk Cake with Caramel Icing for dessert.

We're having left over Poor Man's Lasagna. I made a double batch yesterday (I forgot to cut it in half).

Here's the recipe for the normal sized version, but it doubles perfectly:

1 pound box of elbow macaroni
1 onion, diced
1 bell pepper, diced
3 cloves garlic, minced
1 pound of ground beef
1 can Hunt's Spaghetti sauce
10-12 ounces of sour cream
2 cups shredded Mozzarella cheese
1/2 cup grated Parmesan cheese

Crumble ground beef into skillet, add onion, pepper, and garlic. Brown well and drain fat.

Boil macaroni according to directions, drain well. Mix macaroni, spaghetti sauce, sour cream, and meat mixture, turn into 9x13 pan. Sprinkle Mozzarella on top, followed by the Parmesan.

Place in a 350 degree oven for at least 20 minutes to let the cheese melt good, longer if you want to brown it. Let the lasagna sit for a few minutes to firm up. Serve with garlic bread. ;)

The next time I make this I am going to mix some additional shredded cheese into the macaroni so it will have cheese throughout. My wife loves cheese (she kept getting the cheese off the top when she would get hers :p).

This can also be lightened up very easily by using fat-free sour cream (or yogurt), fat-free cheese, and ground turkey.

BBQ chicken, fired on the grill and then slow baked, baked beans, and green beans.
That was last night. Tonight, we should still be full. :laugh:

Taco salad, made with Doritos. Not exactly health food, but the boy child still whined because there's going to be *gasp* lettuce! (he wanted nachos, I told him this IS nachos, only better. And it is, right?!)

Breakfast for dinner: Pancakes, Eggs, Sausage Gravy and Biscuits, Bacon, Sausage, and American Fries.

We can all share iv's at the hospital tonight when our families go to have blood transfusions because we're overloaded with cholesterol! We should make this official and call it "Baptist Board No Calorie Count Day" and see if they'll make it a national holiday. hehehe April 28th, every year. Oh yah! We could call it NCC Day for short.

It's a date, Gina. I've booked a table for both families complete with candles and linen and a special candle-light IV stand for each person. :smilewinkgrin:

Tonight is done, and tomorrow will likely be sketti. Sundays are pretty full, and it's an easy dish! Plus I'm eager to use some of the basil we've grown.

Tonight was homemade slamburgers and tater tots. We were grocery shopping all day and my wife wanted something easy to fix.
