The problem is that there are differing interpretations of scripture, and Protestants are told that these can be resolved by a simple appeal to scripture.

There has been an objective understanding of Scripture that has continuously stood from the Apostles till now. This is in the Catholic Church.

All of Christianity from the beginning Universally held that Baptism was regenerational and given to infants, and that the Eucharist is the Flesh and Blood of Christ.

Denying this reality is the human tradition and doctrine of Zwingli.

Universal Christian beliefs should be treated very differently. If an interpretation and doctrine is held universally and completely across all Christianity for the first 1500 years then it needs to be taken very seriously.

Jesus would not allow the whole church to be universally deceived for 1500 years, unless you think His promise was a lie, that the gates of hell did prevail against His Church.

That's not so. In Mediaeval times, many of the Waldensians rejected belief in the "real presence". So did Peter Kániš and Giovanni Pico della Mirandola. I am sure there were others before Zwingli.
