    Change of plans. This menu can wait for another day. I almost forgot that tomorrow in the 24th anniversary of Brenda and my first date. I called and got us reservations where we spent our honeymoon so we're headed there for tonight and tomorrow.

    Last night's menu: Meatloaf, mashed potaoes with pork gravy, macaroni and cheese, steamed broccoli, rolls, and no-bake cheesecake for desert.

    Tonight is catch what you can. :p

    An addendum to my earlier post:

    I got a wild hair and made a cake for my mother-in-law. She wanted a red velvet cake, so I made a Red Velvet Cake for her. I used this recipe sans the food coloring (we are out) and I used self-rising flour instead of cake flour, salt, baking soda, and baking powder. I had made the icing from this recipe previously for a fly-by-night chocolate cake I made up as I went and my wife loved it.

    great, always on the look out for a great meatloaf recipe. Last time mine didn't fall apart, YAEAH!!

    The same thing we have every St. Patrick's Day.

    Corned Beef
    New Potatoes
    Cabbage
    Corn Bread

    Did ya'll know that St. Patrick has never been canonized as a saint? He is not even Irish! Nor was he catholic. In the 5th century, he was converting people to Christianity. Period. There were no distinctions such as catholism, Baptist, etc. Just food for thought.

    I forgot it was St. Paddy's day. Oh, well.

    My wife and her mom had the leftovers of the chicken pot pie my wife made yesterday. I wasn't home, so I got stuck with sandwiches.

    I did, however, make a devil's food cake with vanilla buttercream frosting this evening. I've been on a baking kick of late. I really need to snap out it, too...
