I bought some beautiful peppers the other day so I was thinking about making one of Rob's favorites, stuffed peppers.

We'll have family over and having cookouts on the grill all weekend.

Tonight is Burgers and Brats on the grill, Potato Salad, Macaroni Salad, Deep-Dish Apple Pie with Ice Cream.

I've decided we want breakfast, so we're having eggs, country ham with biscuits, hash browns and grits.

I rubbed a roasting chicken with Tony Chachere's Cajun Seasoning, stuck it in an iron skillet in a 350 degree oven. Also rubbed down some potatoes in olive oil and sea salt and threw them in there too. I may steam some baby sweet peas to go with it. We should be eatin' good in a couple of hours.

You might like this, it comes from a middle eastern recipe I make. heat your cast iron skillet in the oven till it's really hot, cut yur whole chicken down the back and open the chicken up. sprinkle with your seasonings and rub with olive oil. when the skillet is hot, quickly lay the chicken skin side down, and weight the chicken down, like with another cast iron skillet, I use 2 stacked to weight it down real good. Bake till done, it comes out cripsy and tender. excellent.

Rob, don't know, wouldn't mind having your dinner, sounds good.
